The Best Banana Bread

The Best Banana Bread
Growing up, I became a baker very early on.  I was always helping my mom or my great-grandma bake something yummy.  I got to be the stirrer and make sure everything was smooth and mixed together.  

Yes, I did get help sometimes, if it was a really thick batter.  But I remember my great-grandma telling me that if I wanted to help, I had to keep stirring until it was done.  So I would switch arms, and go back and forth until finally the dough was just right.  Spending moments in the kitchen like that really instilled a love of baking.  

I remember asking my mom if I could bake the banana bread for a family get together, and I could tell she was a little skeptical.  Even so, she said I could do it with her.  

I must have done a good job, because after that I was pretty much the unofficial banana bread maker.

Banana Bread
½ c. butter (one stick softened)
1 c. sugar
2 eggs
3 bananas
½ c. milk
2 c. flour
1 tsp baking soda
½ tsp salt

  1. Preheat oven to 350 degrees.
  2. In a KitchenAid stand mixer, cream butter and sugar together.
  3. In a separate bowl whisk your eggs and set aside.
  4. Put your bananas in a bowl and mash them up and set them aside. It’s ok if they are a little lumpy. 
  5. Once the cream and butter are mixed well, then add the beaten eggs, mashed bananas and milk.  Mix them all together.
  6. Add your dry ingredients.  You can either have them premixed in a bowl or you can add them directly to the mixer.
  7. Mix well and make sure to get everything from the sides mixed in too.
  8. Put into a greased bread pan, and bake for 1 hour at 350. 
  9. Poke the center of the bread with a toothpick at 1 hour, and if it comes out clean the bread is finished.  You can add a few minutes if needed and retest the center.  
Serve with butter!  It makes a great breakfast or after school treat.

Feel into it. 

As you read, keep a journal or notebook handy to write down any aha moments.  Or if you are a rebel, write in the book….aaaahhhhh.

No Stress Easter Ideas - Part 2
Oh boy, time is flying by.  I can’t believe that Easter is so close.  I am already planning and prepping for our celebration at home.

My family will enjoy the traditional meal for dinner.  What does traditional look like at my house?!? Well, it looks like ham, cheesy potatoes and green beans.  Probably with jellied cranberry sauce for dessert… well, I will have cheesy potatoes for dessert, yummy!!

Then we will spend the rest of the day hanging out & watching movies or playing games.  If it’s nice outside, we might even go for a walk after lunch, you know, to help the food digest.  

It’s what you’ve gotta do after eating a feast!

Then I can reflect on the new growth and celebrate spring as I savor family time!

Oh, and if you need more ideas for Easter baskets, look no further, I’ve got you covered.  

For Kids:
  • As a mom & auntie, non-toxic products are such a relief, and beeswax crayons fit the bill.  You won’t need to feel guilty when letting the littles in your life use them.  
  • Stuffies, well they are a must when filling an easter basket.  And a reversible stuffy is sure to be a hit. 
  • A great idea to keep your littles off of electronics is this cool sticker by number book.  It is ocean themed, so cool!
  • Want to spend a fun afternoon outside, check out these cool footballs.  They whistle and howl when you throw them.  They are sure to make everyone smile.

For Teens:
  • Art and creativity are blooming in the spring.  Check out these art products, your teen will get swept up in sketching and creating masterpieces! 
  • And for your sports lover, here is a nerf football that you can toss around in the yard (or the house, hehe). 

For Adults: 
  • When you are doing your family time, music makes it a party.  Check out these mini speakers to easily bring with you wherever you go!
  • Oh, and you might get thirsty on your adventures, so a Yeti mug is a great option. Plus, this one fits in your cup holder. WIN!!
  • After a long day of FUN, you might just be in the mood to take a hot shower.  These shower steamers will be just a bit EXTRA!!  YASSSSS!

For Harry Potter Superfans!!
  • OK…this is really the best thing that I found.  It is for the superfan of Harry Potter.  It is a Golden Snitch, well really it is a spinner, but you will be the coolest kid or coworker if you show up with it.

No Stress Easter Ideas - Part 1
Can you believe that Easter is just a few short weeks away?  I know, this year has just flown by.

If you are like me, and you live in a snowy part of the country, well, it seems that winter is here for a little bit longer.  Even so, spring seems to peek its head out every now and then to remind us that a new season is coming.

That is what Easter means to me, a new season and new beginnings coming my way.  I am ready for spring, and the new growth that we find with the longer, warmer days.  

Growing up, Easter was always a time to spend with family and celebrate the change of seasons.  We did egg hunts, had Easter baskets, laughed a lot and celebrated those first green patches that were poking through from underneath the melted snow.  

Our Easter baskets were soft and full of pastel colors.  Filled with a few sweet treats and a special goodie that we could use as the weather got warmer.  Once I got a Skip-it, and it was the coolest thing ever.  Probably, my favorite Easter gift was a CD.  I still have it in my collection, but I also have a vinyl version, because everything sounds better on vinyl…just sayin’!!
